Genius Foods

Through EPSRC Impact Acceleration funding, Dr Nick Koumakis, a postdoctoral research associate, is on an industrial placement at Genius Foods in Bathgate, for 6 months during 2019, to work towards developing an understanding of the science behind how each of their 20+ ingredients contribute to the formation and final properties of their bread.  Genius Foods are leaders in manufacturing gluten-free foods.  Nick is using his expertise in rheology and microscopy techniques and experience working with large datasets to help the company identify opportunities for improvements in process efficiency.
